EASY MINI CHICKEN POT PIES

Ingredients The Pastry: 12   oz   / 340 g Shortcrust pastry See here if you would like a recipe to make your own. You will need to DOUBLE the ingredients for the pastry recipe to get 12 mini pies. The Filling: 1 1/2   cups   chopped cooked chicken or turkey meat 1/2   can condense cream of chicken soup 1   cup   mixed vegetables ( I used carrots   corn kernels and peas) 1   beaten egg   for the egg wash at the end Instructions First make the pastry if making your own, divide into 2 balls and wrap with plastic wrap and leave to rest in the fridge whilst you prepare the filling. Then prepare the filling as follows: Put chopped chicken or turkey, mixed veg and cream of chicken soup in a bowl and mix well. Add a pinch of pepper. No salt needed as I find the soup is already salty enough. Set aside. Preheat oven to 350 F or 180 C and grease a 12 hole muffin tray. CASHEW CHICKEN WITH SNOW PEAS AND MUSHROOMS

INGREDIENTS 1 lb boneless skinless chicken breast, cut in ¼-inch strips ½ cup cornstarch ½ + 2 tbs cup oil divided 2 cups snow peas 8 oz button mushrooms ½ cup cashews 2 cloves garlic, crushed 1 slice (about 1-inch in diameter) fresh ginger Marinade : 4 tbs soy sauce 2 tbs dry sherry -OR- dry white wine 2 tsp cornstarch 1 tsp baking soda 1 tsp dark sesame oil Stir Fry Sauce : 2 cups chicken stock 3 tbs dry sherry -OR- dry white wine 1 tbs soy sauce 1 tsp dark sesame oil 4 tbs cornstarch INSTRUCTIONS Mix marinade ingredients in a small bowl. Add the chicken, toss and let sit at room temperature for 1 hour. Drain then place on paper towels to absorb excess moisture. Mix the sauce ingredients in a small bowl and set aside. Heat ½ cup of the oil over medium-high heat in a deep skillet or wok. Oil will shimmer when the correct temperature is reached. Put the ½ cup cornstarch in a plastic bag. Chicken Alfredo French Bread Pizza

Ingredients 1   loaf   french bread   cut in half 1/2  cup   Rao's Homemade Alfredo Sauce 2   cups   mozzarella cheese   shredded 1   cup   cooked chicken   cut into bite-size pieces 2   slices   bacon   cooked and crumbled 2   green onions   sliced 1   roma tomato   seeded and diced 1/4   cup   Parmesan cheese   grated Instructions Preheat oven to 400F. Place French bread halves on a baking sheet.  Spread 1/4 cup of Rao's Homemade Alfredo Sauce on each French bread half. Sprinkle with mozzarella cheese. Layer chicken, bacon, green onions, and roma tomato on top. Grate Parmesan cheese over everything.  Bake for about 10 minutes, until cheese is melted.
