GERMANY: LEKACH

Lekach is a honey cake, spiced with cinnamon, ginger and clove, that is traditional of the Jewish new year throughout Eastern Europe.

Ingredients
  •  cup flour
  • 1 cup whole wheat flour
  • ½ cup brown sugar
  • 1 tablespoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground mace
  • 2 oz. walnuts (or almonds, or a mixture of both), toasted and ground
  •  cup honey
  • 1 cup apple juice
  • 3 tablespoons whisky
  • 4 eggs , beaten
  • ¼ cup vegetable oil
Instructions
  1. Preheat oven to 350 F.
  2. Mix the dry ingredients: both flours, ground almonds or walnuts, sugar, baking powder, baking soda, and spices.
  3. In another bowl, mix honey, apple juice and whisky and emulsify.
  4. Make a well in the center of the dry ingredients, add the oil, eggs, and the liquid mixture.
  5. Whisk at low speed until reaching a smooth dough without lumps.
  6. Pour the mixture into a loaf pan.
  7. Bake for 50 minutes.
  8. Unmold when warm or cold.
  9. Cover with a cloth and consumed preferably 24 hours later.
